苦瓜酿
清蒸而出的酿苦瓜咸鲜脆嫩,清淡爽口,苦瓜香气诱人,微苦鲜香,不但有清热解毒、明目败火、开胃消食之效,还因为它是蒸菜,吃了可以暖胃益气。

    Steps to make 苦瓜酿

    • 1.苦瓜洗净、斜切去头尾,切成小段,去瓤、籽;入沸水汆烫随即捞出,过凉。
    • 2.水发香菇去根,洗净切碎末;虾仁洗净,敲成泥。
    • 3.猪肉馅略剁成肉糜。
    • 4.取一大碗,放入猪肉糜、虾泥、香菇末,加葱花、盐、酱油,搅匀。
    • 5.分次加入清汤,朝同一方向搅拌上劲。(使肉馅更有弹性,成菜更香)
    • 6.苦瓜内逐一填入肉馅,用勺压紧。
    • 7.盘中抹少许油,苦瓜盅摆入。
    • 8.蒸锅水烧开,大火蒸5分钟取出。
    • 9.锅置火上放入枸杞,将蒸苦瓜的原汁入锅中烧开,淋少许香油勾琉璃芡汁。
    • 10.芡汁淋在蒸好的苦瓜上,点缀上枸杞即可。
