说到清明节,最火的美食就是艾叶青团了吧。今天下楼,看到楼下的小摊上摆上了一捆捆的艾叶,3元一把,一斤左右,我忽然想起一位北京的小伙伴,说当天买的艾叶是25元2把,听得我是一惊,这物价,差得真不是一般的远啊。

  • 粘米粉100克
  • 蛋黄10个

Steps to make 蛋黄肉松青团

  • 1.艾叶焯水后捞出混合清水用料理机搅打成泥,过滤出汁液,喜欢吃浓点的可以直接加艾叶泥来揉。
  • 2.做艾叶青团皮之前先来处理蛋黄,蛋黄放在烤盘上,最好买新鲜的咸蛋磕出蛋黄,这样口感最佳,要是用袋装蛋黄建议用油浸泡一晚上。
  • 3.放入ACA烤箱中层,180度烤10分钟左右即可,烤好的蛋黄放冷备用。
  • 4.将糯米粉和粘米粉混合均匀后,加入糖,分次加入艾叶汁揉成团,不黏手即可,不要加太多。
  • 5.将面团分成40克一个的小剂子,手捏开,放入适量的蛋黄和肉松
  • 6.蛋黄用手稍稍捏碎,口感会更好。
  • 7.然后包起来,放在油纸上。
  • 8.全部做好后放在蒸架上,大火上汽蒸15分钟即可。
  • 9.香软不粘牙的艾叶青团就做好了,咬一口,实在好吃,相比15元一个的网红青团毫不逊色哦~
