    Steps to make 香卤豆腐片

    • 1.原料图。
    • 2.豆腐片对角折叠,均匀的切几刀。
    • 3.打开后如图所示(切开便于入味)。
    • 4.切好的豆腐片放入冷水中煮开。(一:豆腐片更软,二:煮去豆腐片的油脂)
    • 5.煮沸的豆腐片捞出。
    • 6.另取一锅,放入桂皮,八角,香叶,干红椒切开,葱段,姜丝,倒入适量的清水,大火煮开。
    • 7.煮开后,滴入料酒,生抽,少量老抽上色,白糖,盐调味。
    • 8.将豆腐片放入,大火煮开,转小火再煮10分钟。关火至晾凉。卤半小时后再继续大火煮开,关火卤制即可。(煮开—晾凉—煮开——晾凉便于入味及上色)
