  • 戚风蛋糕片一片
  • 芒果若干
  • 奶油300g
  • 酸奶250g
  • 芒果泥200g
  • 牛奶70g
  • 吉利丁片半片
  • 淡奶油200g
  • 白砂糖60g
  • 橙汁50g

Steps to make 芒果冻芝士

  • 1.将芒果切下一半,用小刀将果肉划十字花刀,将果皮向下卷曲,贴住果皮依次切下。
  • 2.奶油奶酪放室温下软化,加入250g酸奶,隔水加热搅拌至柔软无颗粒状。
  • 3.摇匀倒入无水无油容器中,加入白砂糖中速打发。
  • 4.打至六成发,有微微的流动感,纹路不会马上消失.
  • 5.吉利丁片凉水泡软,加入牛奶中隔热水融化。
  • 6.芒果边角部分就和软化的奶酪糊一起入料理机打匀。
  • 7.取下奶酪糊倒入打发的奶油中切拌均匀。
  • 8.再倒回料理机中打至均匀。
  • 9.加入融化好的吉利丁牛奶液均匀。
  • 10.慕斯圈中放一层蛋糕坯。
  • 11.倒入芝士糊,填入芒果丁。
  • 12.倒入剩余芝士糊,9分满即可。
  • 13.入冰箱冷藏4小时以上。
  • 14.橙汁50g加凉水软化的吉利丁片半片隔热水融化。
  • 15.稍凉后倒在冷藏好慕斯蛋糕表面,继续冷藏2小时即可。
  • 16.芒果切核,挖球、切花刀。
  • 17.将芒果点缀在慕斯蛋糕表面,撒上蛋糕装饰珠即可。
