自制凉皮

Details of ingredients

  • 高筋面粉500克
  • 少许
  • 黄瓜半根
  • 绿豆芽100克
  • 熟花生50克
  • 7、8粒
  • 香菜2棵
  • 生抽3匙
  • 1匙
  • 油泼辣子2匙
  • 香油少许
  • 八角2颗
  • 花椒10粒
  • 香叶1、2片
  • 少许

Steps to make 自制凉皮

  • 1.面粉加入少许盐,搅拌均匀
  • 2.往面粉中加水,一边加水一边搅拌成大雪花状
  • 3.反复将面团揉至表面光滑,揉好的面团醒30分钟
  • 4.往面团中加水,洗面团,就是在水中用手揉搓面团,这时清水中慢慢有白色浆水析出
  • 5.将白色浆水倒进一个干净容器中
  • 6.继续加清水洗面团
  • 7.洗出的白色液体继续倒入刚刚的容器中
  • 8.如此反复4-5次,直到再也洗不出白色的液体,面团只剩下一团很有劲道的东西就是面筋了,这时就大功告成了,面就洗好了
  • 9.将攒好的面粉浆水放一边静置沉淀5、6小时
  • 10.将八角、花椒、香叶加少许盐放进锅中,加一小碗水煮开,再小火煮5-8分钟关火晾凉,香料水就煮好了
  • 11.将蒜捣碎加凉开水或者矿泉水泡一下,泡出蒜汁
  • 12.面筋上锅蒸熟或者煮熟,撕碎
  • 13.将熟花生米用擀面杖擀碎
  • 14.将绿豆芽入开水锅焯一下水
  • 15.5、6小时后,面粉浆水已经沉淀分层
  • 16.小心将上面一层清水倒出不用
  • 17.取一干净不锈钢平盘(当然有专业的工具更好),刷上油
  • 18.将沉淀出的面粉浆水用勺子搅匀,舀一勺放入平盘中,薄薄的一层就行,放入开水锅中,盖上盖2、3分钟
  • 19.开盖迅速将平盘放入凉水盆中
  • 20.将凉皮轻轻揭开放入干净盘子里
  • 21.将黄瓜洗净切细丝
  • 22.香菜切碎末
  • 23.并准备好料汁
  • 24.将晾凉的凉皮切粗条,放入焯好水的绿豆芽、黄瓜丝、花生碎、香料水、蒜汁、生抽、醋、香油、少许盐、香菜末、油泼辣子充分搅拌均匀
