过大年,捣麻糍。麻糍是仙居人过年必备的年货,临过年前,院子里的几家人会聚在一起,约上几个身强力壮的亲朋好友,相约捣麻糍。糯米预先浸泡一天,把泡好的糯米放在饭甑里蒸熟,庭院里摆上石臼,把蒸熟的糯米饭倒到石臼里,两个人一个捣,一个搅;一个站,一个蹲,搅拌的人不时地用手把杵头抹上水防粘,同时翻动糯米饭团,非常默契。这样一直打到糯米饭变成非常筋道,柔柔韧韧的麻糍团。然后把麻糍团放到撒上玉米粉的大案板上,用擀面杖擀成厚片,再用刀切成小块,手工捣制的麻糍软糯细腻,摊凉几天后可以浸泡在冬水中,经常换水可以保存较长时间。
烧前把麻糍放锅里加热变软,炒好馅料,然后把馅包在麻糍里,做成圆形的饼状,简单一点的就翻过来两边粘住,再放锅里煎黄,外面香脆,里面软糯,搭配上香香的馅,很美味,也非常的扛饿。

    Steps to make 【台州】麻糍

    • 1.香菇、冬笋、豆干、胡萝卜、芥菜梗切成小丁。
    • 2.瘦肉切成小丁,加盐、料酒、生抽、水淀粉拌匀腌制10分钟
    • 3.鸡蛋加盐、料酒、少许清水打匀,锅里热油炒成碎块
    • 4.锅中放油烧至五成热,下入肉末炒熟盛出
    • 5.锅中另放油烧热,下入蔬菜翻炒,快熟时放入炒好的肉末和鸡蛋一起调味
    • 6.麻糍馅炒好盛出
    • 7.麻糍放在抹了一层薄油的盘子里,微波炉里加热2分钟(时间看麻糍大小厚薄来定)
    • 8.案板上抹一点水或油,把麻糍摊在案板上,用手把麻糍压薄,放上适量炒好的馅
    • 9.把馅包在里面,收口整成圆形,锅里倒入少许油烧热,放入麻糍小火煎
    • 10.翻面再煎至表皮金黄
    • 11.又香又脆又糯的麻糍,趁热吃的感觉非常好
