戚风蛋糕其实对于大家并不陌生
在糖果粑粑美食交流一群看到有朋友
发玉米面戚风而且是蒸的
丹蕊老师和我瞬间长草了
商量着做一款粗粮戚风但蒸的蛋糕有不上火的代名词
但还是觉得烤的口感更好
三下五除二整理出了这款配方并录制了教程
希望大家可以喜欢上粗粮蛋糕

  • 鸡蛋5枚
  • 细砂糖60g
  • 玉米油30g
  • 牛奶50g
  • 玉米面粉60g
  • 低筋面粉20g
  • 1g

Steps to make 粗粮做戚风美味不可挡

  • 1.鸡蛋五枚蛋白与蛋黄分离放在无油无水的盆中 确保蛋白中不能有蛋黄。
  • 2.蛋白放进冰箱冷藏与冷冻均可 蛋黄中加入玉米油及牛奶充分混合均匀。
  • 3.玉米面粉 低筋面粉以及盐放在一起过筛进蛋黄糊中。
  • 4.划一字或Z字充分混合呈现细腻且光滑的面糊在过筛一次。
  • 5.蛋白在冰箱取出 如放冷冻表面有一层冰碴效果更佳 细砂糖分三次加入打发至提起打蛋头有小尖角。
  • 6.蛋白分三次与蛋黄糊翻拌混合 幅度不需要太大以防有大气泡进入。
  • 7.倒入中空模具当中 用刮刀抹平 轻震几下震出大气泡 烤箱提前预热上下火150度 烘烤45分钟。
  • 8.出炉轻震几下倒扣放凉 脱模后即可食用。
