蟹肉白酱可乐饼

  • 干燥月桂叶1枚

  • 西红柿罐头1罐
  • 高汤100ml

Steps to make 蟹肉白酱可乐饼

  • 1.黄油入锅。
  • 2.加入面粉,炒出香味。
  • 3.牛奶在微波炉中温热后,分次加入(一次加热的话容易结成颗粒,牛奶加热也是为了防止结粒)。
  • 4.加入蟹肉,继续加热。
  • 5.加入月桂叶,并继续加热让多余的水分蒸,用盐和胡椒粉调好味。
  • 6.摊在容器里入冰箱2个小时。
  • 7.取出后去掉月桂叶,分成10个,裹上面粉。
  • 8.过蛋液后,再裹上面包糠。
  • 9.入油锅炸。注意油要高过可乐饼的一半。否则表面容易破。
  • 10.西红柿罐头的汁滤去待用,锅里下油,入大蒜,待有香味出来后,下罐头西红柿并压碎。
  • 11.过滤后到回平底锅,加入西红柿罐头汁和高汤,加热使水分蒸发至量减半。用盐和胡椒粉调味。
  • 12.12.加入黄油,关火,用余热使黄油融化。
  • 13.13.盘子上先铺上西红柿沙司,沙司上放上炸好的可乐饼,配上莴苣,西芹和塔塔酱。
