钵钵鸡是四川名小吃,类似于火锅,但又与火锅不同,因为它是通过调料浸泡入蔬菜和肉类的方式——冷吃。调钵钵鸡调料时,有高汤调味最好,没有也可以用开水加入鸡精和味精、蚝油1勺作为汤底。如果没有麻辣调味包,可以用芝麻油5勺,加入辣酱面香煎一下,放入豆瓣酱1勺、十三香1勺、胡椒粉和花椒粉各一勺,盐少许,炒香以后用开水煮开放凉也不错呢!关键钵钵鸡不能出现凝固,所以要避开牛油等动物油脂。在家做时,除了鸡肉,加入牛肉和各种喜欢吃的蔬菜,味道香辣。

Steps to make 家庭版钵钵鸡

  • 1.鸡腿洗干净以后,放入加了料酒和姜粉的水中煮熟。
  • 2.钵钵鸡调料备用。
  • 3.鸡腿熟了捞出切片备用。
  • 4.把剔除了肉的鸡腿骨头继续熬煮十分钟,然后换一个大一点的容器,趁汤热时放入调味粉包,没有调味粉包可以放入鸡精或者高汤。
  • 5.把钵钵鸡的辣味料包放入锅里,搅拌均匀。锅底准备好啦,准备放菜。
  • 6.水开以后,放入木耳和火锅脆皮肠,建议先煮不容易糊锅变色的菜,或者先煮不容易入味的菜,这样可以先放入锅底多浸泡一会儿,更方便入味。
  • 7.煮好的鹌鹑蛋剥掉壳以后,用牙签戳几个小孔,方便入味,放入调好味道的锅里。
  • 8.莴笋直接切成长片放入锅里入味。因为莴笋生的都可以吃,所以不用煮。
  • 9.捞出木耳和火锅肠,放入调料锅里,水里继续放入方竹笋、金针菇煮。
  • 10.炒藕切成片放入锅里煮。一定要买炒藕,不然藕片吃起来不脆。
  • 11.把切好的鸡肉片和煮好的各种蔬菜放进锅里浸泡入味半小时。
  • 12.西兰花和土豆片微微烫一下就行了,保持它们的脆。所有菜品放入锅里至少静置半小时,让菜品充分入味。
  • 13.撒上芝麻,一锅香喷喷的钵钵鸡就做好啦!
