煎酿香菇肉丸
香菇酿小丸子,我的宴客私房菜。倒扣的香菇,如小船,装满了肉馅,肉与香菇的味道,经过炖煮,完全溶在一起,操作起来,也是相当的简单。

Steps to make 煎酿香菇肉丸

  • 1.先取个头关差不多的香菇,去蒂洗净。
  • 2.肉馅加淀粉、料酒、酱油、胡椒粉、少许葱姜末拌匀。
  • 3.将香菇里填满肉馅 。
  • 4.锅中放少许油,将有肉馅的一面先煎,保持中小火。
  • 5.翻面略煎。
  • 6.另取一锅,加入高汤、蚝油、姜、葱、放入煎好的香菇。
  • 7.煮至汤汁快要收尽时,出锅。
  • 8.装盘即可。
