清蒸武昌鱼
武昌鱼(WuchangFish),俗称团头鲂、缩项鳊。据《武昌县志》载:鲂,即鳊鱼,又称缩项鳊,产樊口者甲天下。是处水势回旋,深潭无底,渔人置罾捕得之,止此一罾味肥美,余亦较胜别地。"同时,以"鳞白而腹内无黑膜者真。"属名贵淡水鱼菜。又因为现代有毛泽东"才饮长沙水,又食武昌鱼"的词句,使武昌鱼更为闻名遐迩。

Steps to make 清蒸武昌鱼

  • 1.武昌鱼清洗干净
  • 2.葱切段姜切丝
  • 3.鱼用刀划几刀方便入味,用手在表面和切口处抹适量的盐,鱼肚子中也抹一点,盐的量根据鱼和自己口味调节
  • 4.将一部分葱和姜放进鱼肚子中
  • 5.另外一部分夹在切口中,表面也撒一些
  • 6.倒入料酒
  • 7.倒入鲜酱油腌制半小时左右
  • 8.放入蒸锅,蒸熟。冷水入锅,出蒸汽后计时,蒸15分钟左右。根据鱼的大小调整时间
  • 9.成品,我的锅有点小,鱼尾巴被切掉了
