Steps to make 春饼

  • 1.面粉里放入盐提高面粉的筋性。
  • 2.倒入温水,用筷子搅拌。
  • 3.搅拌成絮状。
  • 4.和成一个软硬适中的面团。
  • 5.盖上保鲜袋醒一个小时。
  • 6.碗里放一汤勺面粉,再放两汤勺熟油,调成像图片上一样状态的油酥。
  • 7.面团醒好后,不用揉面,直接拿出来搓成条,切成大小一致的小份。
  • 8.把小面剂揉成小面团,盖上保鲜膜再次醒十分钟。
  • 9.把小面团擀成饺子皮大小。
  • 10.面皮上刷上一层油酥,再放第二张面皮,然后在抹油酥,再放面皮,把几张,甚至十来张面皮摞在一起。
  • 11.最上面的面皮不用摸油酥,然后用手把饼皮的边缘按一按,这样擀起来才比较均匀。
  • 12.电饼铛开最高火,提前预热。
  • 13.饼皮用擀面杖擀开,并且,需要擀几下,翻面,继续擀,然后再翻面,再擀,这样把饼皮擀匀。
  • 14.把饼皮放入预热好的电饼铛里,十几秒钟后翻面。
  • 15.翻过来后就把最上面的一层饼轻轻撕下来。
  • 16.然后再次翻面,再次撕下上面的饼,直到最后一张。
  • 17.这样一直到最后一张撕下来,看这样做的饼透明度很好,而且也很劲道,吃在嘴里,满嘴的面香,这样的春饼谁不爱呢。
  • 18.和合菜卷在一起,真的很搭,其实,像京酱肉丝,烤鸭都能配这个饼。
