Steps to make 老北京鸡肉卷

  • 1.准备一个鸡腿,鸡胸肉也可以。
  • 2.鸡腿去掉皮和骨头切成手指长的条
  • 3.根据自己口味加入适量盐,五香粉,辣椒粉,黑胡椒粉和料酒。
  • 4.戴一次性手套把调料抓匀,密封冷藏半小时以上,我都是早上做,所以头天晚上提前煨好放冰箱里,冷藏一夜更入味。
  • 5.用一碗面粉,半碗淀粉,一个鸡蛋,少量清水,一勺盐,一勺五香粉,半勺黑胡椒粉调成面糊,另外再准备一碗干面粉。
  • 6.调面糊时水别一下加太多,分次加入,夹块肉到面糊里粘一圈,能挂住面糊即可。
  • 7.把腌好的鸡肉都倒入面糊里搅匀,让每块肉都完全沾上面糊。
  • 8.锅里多倒些油,中火加热至筷子放时周围起小泡。
  • 9.沾满面糊的鸡肉再放到干面粉里滚一圈抖掉多余的干粉,然后放到油锅里炸,裹完面糊再沾完干粉的鸡块炸完就会出麟片。
  • 10.炸至金黄捞出
  • 11.黄瓜切细条,葱切粗丝,生菜叶洗净。
  • 12.准备沙拉酱和甜面酱,也可以根据自己口味选择酱料。
