凉拌花甲
花甲即花蛤,因粤语花蛤与花甲同音,花蛤被人写作花甲。花甲性寒,入肝经,有滋阴润燥的功效,可用于治疗阴虚内热、内热消渴等症。入膀胱经,可通利水道,清膀胱之热,有利水消肿的功效,可用于治疗水肿、崩漏、小便不利等症。花甲性寒散,具有软坚散结、化痰的功效,可用于治疗癖块、瘿瘤、痰积、痔疮等症。肉中含有代尔太7-胆固醇和24-亚甲基胆固醇成分,兼有抑制胆固醇在肝脏合成和加速排泄胆固醇的独特作用,从而可使体内胆固醇下降。

  • 花甲1000g
  • 洋葱1/4个
  • 仔姜半块
  • 青红小米辣各6颗
  • 大葱半根
  • 大蒜3颗
  • 陈醋3匙
  • 白糖3匙
  • 蚝油2匙
  • 味精2匙
  • 香油1匙
  • 料酒1勺

Steps to make 凉拌花甲

  • 1.花甲用水反复冲洗干净。
  • 2.将水烧开,倒入花甲、加适当料酒。
  • 3.花甲全部张开(约3分钟), 捞起用冷水将泡沫冲洗干净。
  • 4.将花甲倒入冷开水中, 放入适量的盐浸泡15分钟入味。
  • 5.将仔姜和洋葱切成细丝,青红小米椒切成颗粒,老姜、大蒜、大葱、香菜切末备用。
  • 6.将味极鲜、陈醋、白糖、蚝油、姜葱蒜末、香油、味精、芥末搅拌均匀,加适量的水调成汁。
  • 7.倒入花甲、仔姜丝、洋葱丝、青红小米辣 搅拌均匀入味。
  • 8.装盘撒上香菜末,凉拌的花甲就完成了。
