自制凉皮

Steps to make 自制凉皮

  • 1.面粉加水活成面团。
  • 2.将面粉放清水中揉搓出粉浆,直至盆中的水变清澈。
  • 3.将粉浆放冰箱冷藏室静置三小时以上,倒掉表面的清水,只留下粉浆。
  • 4.锅中烧开水,将盘子放入锅中,盘子刷上一层薄油。
  • 5.将粉浆重新搅拌均匀,舀一勺粉浆放入盘子中,慢慢摊匀。
  • 6.盖上锅盖焖一分钟左右。
  • 7.待表面冒气泡,颜色变透明后,轻轻揭开。
  • 8.凉皮就做好了。
  • 9.凉皮全部摊完后,将它切成面条宽度。
  • 10.洗面剩下来的面筋蒸熟切成细丝,黄瓜切丝,蒜头剁成沫。
  • 11.绿豆芽洗净。
  • 12.放开水中焯水,捞出挤干水分,晾凉。
  • 13.将所有材料放入盆中。
  • 14.调入所有调料拌匀。
  • 15.装盘即可食用。
