香辣豆豉烤鱼
我最喜欢的做鱼方法就是烤鱼!!!
因为我最不喜欢的一道工序炸鱼可以省去~
25B的长帝,原配烤盘,一次一条一斤半的鱼正好!!
配菜选择一些不易出水得好,推荐土豆、莴笋,真心的好吃的说~~

    Steps to make 香辣豆豉烤鱼

    • 1.我今天用的是一条一斤半的草鱼。让商贩把鱼鳞处理干净;自己用厨房专用剪刀把鱼从下面分开(鱼头也要分开);我会用剪刀把鱼的脊骨两侧的肉都剪开,这样鱼就能轻松的铺平了;料酒、少许盐和姜片提前研制一会儿备用。
    • 2.土豆、青笋和藕片儿切条,金针菇减去根部。
    • 3.洋葱和大葱切丝;大蒜可以多备一些,作为配菜烤来吃也很好吃的。
    • 4.腌制好的鱼平铺在铺好葱丝的烤盘上,刷上一层油,200度先预烤一下(大约5分钟);看到烤盘里出水了一定要把水倒掉。
    • 5.土豆和藕过油炸一遍。
    • 6.炸土豆的油爆香花椒、麻椒、香叶、大料。
    • 7.翻炒洋葱、大蒜和一半的大葱。
    • 8.加入一勺郫县豆瓣酱和两勺老干妈。
    • 9.翻炒金针菇和青笋。
    • 10.倒进炸好的耦和土豆加啤酒稍微煮一下;调整一下咸淡。
    • 11.把翻炒好的菜浇在鱼上,再次进烤箱。200度15分钟左右。
    • 12.大饼切小块儿。
