  • 1.新鲜折耳根的根部会有一些掐不动的老根,还有毛须。
  • 2.将老根、须掐去,留下嫩白根及叶片。
  • 3.用清水多洗几遍,洗净去泥沙,用冷水浸泡5分钟,捞出控干水分待用。
  • 4.取一个小碗,将大蒜和小米辣分别剁碎。
  • 5.调入白醋一勺。
  • 6.味极鲜2勺。
  • 7.一点香油、一勺盐、一勺白糖、一勺鸡精,如果有炸好的辣椒油,也来一点儿。
  • 8.调匀后浇在折耳根上,吃的时候,拌匀即可。
