炒凉粉
炒凉粉是传统的风味小吃,炒好的凉粉软香鲜嫩,焦而不糊,而且价钱非常便宜,所以自古以来就非常受欢迎。据说从北宋时起,百姓为求神龙降雨驱邪、乞求风调雨顺,每到农历二月二那天,家家就以炒凉粉来供奉神龙。龙王吃了凉粉以后,神清气爽,便精神抖擞地为老百姓降下喜雨、驱除邪魔。从小我就爱吃炒凉粉,虽然现在很少吃了,但它的味道却在我记忆中留下着深刻的印象。

  • 姜丝2克
  • 蒜蓉10克
  • 3克
  • 味精2克
  • 酱油1汤勺
  • 陈醋2汤勺

  • 花生油50克

Steps to make 炒凉粉

  • 1.凉粉洗净,切成长宽各3厘米的方块。
  • 2.锅内放入花生油,油热放入蒜、姜爆香,将切好的凉粉块入锅煎一会。
  • 3.放入黄豆酱和泡椒翻炒均匀。
  • 4.将陈醋、白糖、蒜末、盐、酱油兑成一碗蒜醋汁浇在凉粉上加盖待入味。起锅时,放入味精、胡椒粉,淋点香油撒上点儿香葱即成。
