南宁特色“老友炒粉”
老友粉 已经成为南宁的标志性特色小吃,无论是本地市民还是外地游客都纷纷品尝。 老友粉是到南宁必吃的美食之一,由百年名小吃老友面演化而来,是南宁小吃的金字招牌,口味鲜辣,汤料香浓,开胃驱寒,深受食客欢迎。

老友炒粉是改良版的老友粉,就是不做成汤粉,而改用干炒的方法。

    Steps to make 南宁特色“老友炒粉”

    • 1.扁米粉(我们叫切粉)400克;
    • 2.肉末、酸笋、蒜末、豆豉、辣椒酱,准备好;
    • 3.大火把锅烧干,烧热,放入酸笋烤干水份,主要是烤干腌酸笋的酸水,这样就不臭酸气了;
    • 4.锅烧热,下油,再放米粉大火快炒,加少午酱油调色,加适量盐,双手不停的颠锅,将米粉颠散,使其颜色和味道均匀;
    • 5.热锅浇油,要猪油,油要够多,不然炒不出香味,爆香蒜末豆豉和辣椒酱;
    • 6.放入酸笋翻炒,再将腌好的肉片放入翻炒。这个过程火要大,手脚一定要快。慢了这些料就烧焦了;
    • 7.把炒好的米粉倒入,一起炒,不要用铲子翻弄,要不停的颠锅,使米粉与肉料混合好即可。
