【芸芸小厨】三杯鸡
三杯鸡,是我去台湾或者台式餐厅必点的一道菜。其实三杯鸡并不发源于台湾,而是一道发源于江西的汉族名菜。 三杯鸡传到了台湾。台湾人对它进行了小改造,将油腻的猪油换成了清淡的食用油,而且加入了一种独特的香料——九层塔,最后提香。

这道菜也是我家餐桌上的“常客”。材料很简单,整只的土鸡,鸡腿或者是鸡翅也都可以,最后加入的九层塔现在也很容易买到,所以想吃的时候就会做来吃。

Details of ingredients

  • 鸡肉500g
  • 食用油50ml
  • 麻油20ml
  • 老抽10ml
  • 生抽40ml
  • 花雕酒60ml
  • 冰糖8颗
  • 大蒜8颗
  • 6片
  • 干辣椒4个
  • 青椒半个
  • 九层塔数片
  • 红椒半个

Steps to make 【芸芸小厨】三杯鸡

  • 1.鸡肉切块,流水冲尽血水。大蒜去皮,生姜、青红椒切片,备用。调制三杯汁,将麻油、老抽、生抽混合备用。
  • 2.锅烧热,放油。加入蒜、姜片、干辣椒,煸炒香。
  • 3.放入鸡块煸炒至金黄。
  • 4.加入混合好的酱汁,翻炒上色。
  • 5.加入糖、花雕酒,翻炒。烧开焖20分钟。
  • 6.出锅前加入辣椒片,九层塔提香。
  • 7.盛出装盘,一盘色、香、味俱全的三杯鸡就做好啦!
