儿时的记忆又浮现在眼前~
深秋,家家都买上几百斤大白菜,大院子里到处都是积酸菜的情景,父亲也积上满满一大缸酸菜,留着一冬天吃~
买肉要肉票,去三洞桥底下私买点,跟做贼似的~
春节前几天炖上一大锅酸菜,加了很多五花肉,留着慢慢吃(上顿下顿热),那里的大肥肉香的呀,一辈子都忘不了~
今天这个炖酸菜的版本是我家的做法,妈妈就是这么做的,不炒酸菜不炒肉,都放锅里炖,原汁原味,只要有有肉,只要有炖的时间够,就嘎嘎香~
今天这个酸菜是买现成袋装的,切好的酸菜丝比较省事~

  • 酸菜一袋
  • 粉条200g
  • 大葱一颗
  • 一块
  • 八角二个
  • 花椒数粒
  • 精盐一匙

Steps to make 五花肉炖酸菜

  • 1.食材集合。
  • 2.五花肉放入清水中,锅中加入适量料酒,大葱和八角,水烧开后撇去浮末,继续煮十分钟。
  • 3.肉捞出切大薄片。
  • 4.大葱切段,姜切片。
  • 5.酸菜用凉水投两遍攥干。
  • 6.砂锅里多加一些清水,下入酸菜丝。
  • 7.五花肉下入,加入大葱、姜、八角花椒粒。
  • 8.盖上盖子,大火烧开小火慢炖,炖煮大约一个半小时。
  • 9.酸菜软烂时下入粉条,加入精盐再炖十分钟。
  • 10.出锅前加入鸡精。
