  • 料酒2大勺

  • 1.将羊肉洗干净入开水锅中绰烫,绰水完毕沥干水分。(肉排请店家切好)
  • 2.准备好调味料,姜,葱,蒜切片。 (此处漏拍了干山楂)
  • 3.锅中倒油,将花椒炸出香味后,再将花椒捞出不用。
  • 4.将葱,姜,蒜,花椒,干辣椒,香叶,八角,桂皮,小茴香一起放入锅中炒香。
  • 5.炒出香味后将羊肉加入同炒。
  • 6.翻炒2分钟后加入料酒,翻炒均匀后再加入老抽及生抽。
  • 7.炒至上色后加入没过羊肉的开水。
  • 8.加入干山楂煮开后改小火炖1.5个小时。
  • 9.出锅前10分钟加入白糖翻炒均匀。
  • 10.炖至肉质软烂汤汁粘稠时将切好的香菜段加入视口味调入适量的盐及鸡精拌匀即可出锅。
