紫薯水晶饼
晶莹剔透的水晶饼是广东经典传统点心,肉馅隐隐约约可见。,让人垂涎三尺。我采用的是紫薯馅,紫色是我喜欢的颜色,在水晶饼下更美味,健康。PS:1.喜欢吃莲蓉馅、豆沙馅、芸豆馅等等,根据自己喜欢口味做。2.食材中的主料为水晶饼皮,辅料为紫薯馅。

  • 特生粉50克
  • 白砂糖150克
  • 玉米油10克
  • 紫薯200克
  • 白砂糖40克
  • 麦芽糖20克
  • 玉米油40克

Steps to make 紫薯水晶饼

  • 1.准备食材:澄面、特生粉、白砂糖、紫薯、麦芽糖、玉米油等食材;
  • 2.先做馅料:紫薯蒸熟去皮,打碎成紫薯泥;
  • 3.紫薯泥放入锅中,加入白砂糖炒至溶解,再加入麦芽糖炒均,加入玉米油,分三次加入,每次炒至完全吸收。PS:可以查看我的紫薯馅菜谱具体做法。
  • 4.做好的紫薯放凉,待用;
  • 5.白砂糖加入适量的水煮沸,待白砂糖全部溶解;
  • 6.澄面、特生粉 拌均,把煮沸的糖水倒入拌均;PS:拌均好的面团是半透明状。
  • 7.再加入玉米油,揉成光滑的面团,然后分成30克的小面团;
  • 8.把小面团压薄,放入20克的紫薯馅;
  • 9.放入模具中,压出自己喜欢的图案;
  • 10.做的水晶紫薯饼胚,放入蒸锅中;
  • 11.清水煮沸,,把蒸笼放入蒸架上,蒸8分钟即可。
