爆腌芥菜丝
今天分享一个用糖和酱油等做的咸菜,用的爆腌的方法,无需几十天的等待,一天就可以吃了,而且口感爽脆,酱香中透着甜香,酸甜咸香好吃又下饭。所用食材芥菜疙瘩,这个季节也正是大量上市的季节,我们这里菜市场很多,买几个回来腌一下,保证比买的 咸菜好吃N倍。

  • 50g
  • 老抽15g
  • 生抽50g
  • 米醋60g
  • 白糖50g
  • 五香粉2g

Steps to make 爆腌芥菜丝

  • 1.芥菜疙瘩洗净。
  • 2.削掉外皮。
  • 3.切丝加盐,拌均匀腌6小时以上。
  • 4.腌好后用力把汁挤出来,这样就可以把芥菜丝里面芥菜辣涩味去除很大一部分,而盐也大部分都被留到了挤出来的汁里,腌好的菜不会很咸。
  • 5.老抽,生抽和糖放入锅里,小火煮开,这样可以把糖融化,也把酱油的酱香味激发出来。
  • 6.晾凉放入米醋,也可以放点五香粉。
  • 7.放入芥菜丝拌均匀。
  • 8.如果不喜欢酱油味太浓或者喜欢浅颜色的,可以把老抽的量减少到5克,其它配方不变,就是图示的这个浅色。我是同时腌了两种,浅色的还加了点辣椒粉。
  • 9.放入密封罐或者瓶子里。腌一天就可以吃了。瓶子密封,装的时候压实,可以放很久不会坏。
  • 10.这是腌了一天的深浅两种颜色的芥菜丝。
  • 11.吃的时候取需要的量,放入香菜,辣椒油和香油拌一下更好吃。
  • 12.拌好的芥菜丝,口感爽脆,酱香中透着甜香,酸甜可口非常好吃。
