Steps to make 鸡蛋肠粉

  • 1.制作调料。炒锅放油,放入蚝油、酱油、辣椒酱翻炒匀,加入切成粒的葱、蒜、酸茭头、酸豆角,稍翻炒即可。
  • 2.将所有粉类混合,加入清水、1小勺食用油,拌匀成米浆。
  • 3.准备二个蒸盘,轮换使用。取一蒸盘,刷一层薄油防粘。锅里的水烧开后,往蒸盘里舀入适量米浆,放进蒸锅,四周摇晃,使米浆均匀地覆盖在蒸盘上,直到米浆凝固成粉皮,淋上蛋液,撒些葱花,盖上盖子,大火蒸2-3分钟,一开盖子会看到鼓起大泡泡并瞬间回落,这就熟了。
  • 4.用刮板边刮边卷起来。
  • 5.装盘,放上调料,美味爽口。
