    Steps to make 锅塌豆腐

    • 1.豆腐一块500克左右切成厚薄、大小均匀的豆腐片,容器中加入适量的花椒和盐用开水浸泡出味儿待变温后再放入葱花、姜片、豆腐腌制1小时左右使豆腐更好的入味儿
    • 2.葱、姜、方火腿适量分别切成葱丝、姜丝、火腿丝
    • 3.香菜择洗干净切成香菜段
    • 4.浸泡入味儿的豆腐捞出控干水分备用,鸡蛋两个打入碗中用筷子搅拌均匀成鸡蛋液,面粉适量放入容器中备好
    • 5.热锅加入适量的花生油,把豆腐先均匀蘸上干面粉再裹上蛋液放入锅中煎至两面金黄即可,煎好的豆腐放入容器中根据自己的喜好把大块改刀切成小块
    • 6.煎完豆腐的锅中加入少许花生油,把葱、姜丝爆香加少许蚝油翻炒均匀
    • 7.倒入适量的清水放入煎好的豆腐,均匀地摆上火腿丝炖至汤汁浓稠时关火出锅
    • 8.为了整体的美观把炖好的豆腐整体滑入盘中撒香菜段即可。
