港式星洲炒米
星洲炒米是香港茶餐厅常见食品,但不是每一间茶餐厅都整的好食,星洲炒米不能太软烂,虾肉要弹牙,韭黄芽菜要脆口,每一口每种食材混合在一起的的香味都要十足,而又不会油腻。

Steps to make 港式星洲炒米

  • 1.先将韭黄洗好切小段,芽菜洗好,虾仁汆烫过放冰箱冷藏30分钟(弹牙必做,如果不喜欢弹牙的口感可以不放)适量咖喱粉。
  • 2.米粉需要事先烫过之后泡凉水,白醋我选的自制醋,糖和醋的比例是1:1,葱花和咖喱粉的比例也是1:1。
  • 3.小火煸香叉烧和虾仁。
  • 4.煸香后,将虾仁和叉烧铲到一边,在锅另一边放适量咖喱微火煸香。
  • 5.将咖喱香味,慢慢炒出。(千万不能用大火)
  • 6.咖喱香味四溢时,慢慢加入水将咖喱粉调成均匀不结块的咖喱汁。
  • 7.放入米粉,拌炒均匀。
  • 8.加入葱花,韭黄,芽菜,糖拌匀,最后加白醋拌炒均匀后关火。
  • 9.一道香喷喷的星洲炒米就做好了。
