知识来自网络:甑糕是西安的特色小吃。蒸糕的深口大铁锅古名为“甑”,因此而得名。甑糕质地柔软细腻,这种甜品小吃是用糯米、云豆和红枣蒸成,蒸熟后香味四溢。甑糕的下层白饭渗入枣色,呈鲜润的绛红色泽,上面一层云豆,呈咖啡的褐色,再上层便是暗红色的枣泥,卖相诱人。甑糕口感黏软香甜,又很饱腹,是当地人常吃的食品。 甑糕,是关中地区的传统早点食品,是以糯米和红枣为原料制成的一种甜糕。其特点是:枣香浓郁,软糯黏甜。

    Steps to make 陕西小吃 — 甑糕

    • 1.糯米洗净,浸泡4个小时左右。用手能捻碎即可。
    • 2.红枣洗净,,泡涨。
    • 3.取一个深一点的容器,先放一层蜜豆,(不喜欢蜜豆的话,可以用泡涨的红芸豆或红枣)。
    • 4.在蜜豆上铺一层糯米。
    • 5.重复3,4步,装至容器的9分满就可以了,将红枣掰开,整齐码放在糯米上。
    • 6.加入适量冷水。
    • 7.水量没过红枣的一半即可。
    • 8.放入电压力锅中,按“豆,蹄筋”键蒸。
    • 9.蒸好的甑糕取出,用铲子将红枣抹成枣泥。
    • 10.枣香浓郁,软糯黏甜。
