上次做奶酪蛋糕时还剩了一些奶油奶酪,这次做软曲奇正好用上。
今天做的这款奶酪软曲奇,与我们平常吃的曲奇有所不同。它之所以叫奶酪软曲奇,是因为奶油奶酪中含有大量的水分,当制作好的成品放置一段时间后,奶酪馅中的水分会慢慢侵入到饼干中,这时候吃上去的饼干便会是松软的口感。而且它的味道也很适口,有点酸,有点甜,还有点咸,并且,奶酪馅心吃在嘴里一点也不感觉油腻,特别美味。

  • 红曲粉5g
  • 蛋黄35g
  • 蛋清70g
  • 高筋面粉30g
  • 玉米淀粉30g
  • 细砂糖35g
  • 白巧克力15g
  • 黄油5g
  • 橙味酒5g

  • 1.准备好所需食材
  • 2.把20克的玉米淀粉混入蛋黄中,并将其搅拌均匀
  • 3.高筋面粉中加入10克玉米淀粉,混合均匀后过筛一遍
  • 4.打发蛋清时分三次加入细砂糖打至干性发泡
  • 5.取三分之一蛋白霜放入蛋黄糊中混合均匀
  • 6.筛入红曲粉搅拌均匀
  • 7.再倒入剩余的蛋白霜中,进行切割式搅拌(不能划圈搅拌,容易消泡)
  • 8.拌匀后将过筛的面粉分两次倒入,并搅拌均匀
  • 9.将面糊倒入裱花袋中
  • 10.烤盘上垫一张油纸,然后挤成小圆饼形状
  • 11.烤箱上下火165度预热5分钟,烤盘放置下层(烤箱大点的放中层),烤制20分钟左右即可
  • 12.这时,可以来做夹心馅,白巧克力隔热水融化
  • 13.将融化的巧克力与奶油奶酪、橙味酒、黄油混合在一起,并搅拌均匀,越细腻越好,装入裱花袋中
  • 14.饼干冷却后脱模,取一块饼干,将奶酪馅心挤在饼干上,再用另一块饼干盖上就完成了
  • 15.撒点糖粉装饰也不错,迫不及待的吃了一块,真心好吃
