低糖菠菜戚风
喜欢自然的味道,更喜欢把天然的植物做到美食里,好久没做戚风了,尝试了一款低糖菠菜戚风,口感很不错

  • 低筋面粉100克
  • 葵花籽油30克
  • 菠菜汁72克
  • 鸡蛋5个
  • 白砂糖30克

Steps to make 低糖菠菜戚风

  • 1. 菠菜洗净沥干水份切成小段
  • 2.加15克的水,用破壁机二档打成菠菜泥
  • 3.把菠菜泥过滤分离出菠菜汁
  • 4.分离蛋白和蛋黄,装蛋白的盆一定要无水无油
  • 5.菠菜汁里加入30克的葵花籽油混合均匀
  • 6.加入低筋面粉
  • 7.十字切拌手法拌匀,不要画圈搅拌,容易起筋
  • 8. 分3次加入蛋黄,拌匀后再加入另外一个蛋黄
  • 9. 蛋黄糊搅拌好,放一边备用
  • 10.在蛋清里一次性加入白砂糖
  • 11. 蛋清打发到完全干性
  • 12.取三分之一蛋白霜放入蛋黄糊,用蛋抽Z字型手法混合面糊,这个时候预热烤箱上火120度,下火170度
  • 13.把蛋黄糊倒回装有蛋白的盆里,继续同样手法翻拌均匀
  • 14. 蛋糕糊倒入模具里轻震2下模具,表面的气泡用牙签划一下
  • 15.烤箱底层,上火120度,下火170度,60分钟(补充一下,我用的烤箱是要放底层的,其他品牌烤箱可以放中下层或者根据平时的使用习惯来烤戚风)
  • 16.烤熟后取出蛋糕模具倒扣放凉
  • 17.手工脱模
  • 18.很清新的绿色戚风
