自制腌茄子
这是老家才有的家乡味,小时候妈妈做的特别好吃,搭配稀饭真是绝了。

  • 蒜头4瓣
  • 生姜1块
  • 小米辣2个
  • 生抽2勺
  • 香醋1勺
  • 半匙
  • 鸡精半匙
  • 白糖1勺

Steps to make 自制腌茄子

  • 1.妈妈自己晒的茄子干,非常漂亮。茄子干的做法可以参考我之前发的菜谱。
  • 2.把茄子干用剪刀剪成小段,装到碗里备用。
  • 3.准备一壶烧开的水,把开水倒入装茄子干的碗里,没过茄子干。
  • 4.倒扣一个盘子,焖五分钟。
  • 5.可以打开尝一下,我比较喜欢有嚼劲的,泡了五分钟。喜欢软一点的朋友可以多泡会儿
  • 6.把泡好的茄子干捞出,控干水分,装盘子备用。生姜切成细丝,小米辣切圈,蒜头剁碎。
  • 7.把姜蒜辣椒放入装茄子干的盘子里。
  • 8.加2勺生抽,1勺香醋,1勺白糖,半匙盐和鸡精,搅拌均匀。
  • 9.成品。咸香酸辣有嚼劲,搭配稀饭,呼哧呼哧,一碗一下子就喝完了。
  • 10.可以一次多做点,装到玻璃罐子里,放冰箱冷藏,吃个三四天没问题。
  • 11.我做了半罐,结果两天就吃完了,家里人都很喜欢。
