逢年过节,家里都会做上几个红桃粿拜神祭祖,潮州人认为红色是吉祥如意、好意头的象征,而酵粿在制作过程需要发酵,故取其“发”的好意义。

Steps to make 【潮州】红桃粿

  • 1.锅中加入适量的水,加入适量的红花粉,煮沸
  • 2.水煮沸后,把粘米粉倒入锅中,盖上盖子焖一下
  • 3.焖好的粘米粉用擀面杖使劲和
  • 4.粘米粉团倒入粿盆中揉搓至面团光滑
  • 5.糯米饭用电饭煲蒸熟,香菇剁成丁,大蒜切碎和虾米一起炒,炒成糯米饭
  • 6.揪一小团面团
  • 7.捏成碗状
  • 8.加入适量的糯米饭
  • 9.把粿胚收口
  • 10.形状大小和红桃粿印差不多
  • 11.放入红桃粿模具中压平
  • 12.倒扣,取出红桃粿
  • 13.蒸锅底铺上蒸笼布,摆上红桃粿,粿与粿之间要留有空隙,蒸15分钟即可
  • 14.蒸熟的红桃粿可以直接吃,可以煎至金黄再淋上潮汕鹅卤,这就是家乡的味道
