Steps to make 毛氏红烧肉

  • 1.五花肉加姜、料酒、花椒一起煮熟,煮熟后切成块备用。
  • 2.糖和水的比例在1:2,水要开水。糖放锅中加热,分多次加入少许水化开。
  • 3.大火炒化后开小火炒至棕黄色,大量冒泡冒烟之后倒入热水,熬制1分钟即可盛出备用。
  • 4.锅内热少量油放姜蒜、八角、桂皮、香叶略炒,然后加肉同炒,炒到肉大量出油后将多余的油沥出。
  • 5.放少许盐、4勺料酒和炒好的糖水。
  • 6.加没过肉的水文火焖煮1个小时左右,慢慢熬煮至收汁后即可出锅。
