Steps to make 琉璃茄子

  • 1.茄子洗干净去皮。
  • 2.切成厚一点的片。
  • 3.切成条。
  • 4.再切成小块。
  • 5.准备辅料。
  • 6.取一大碗,鸡蛋倒进去加一勺花生油。
  • 7.搅拌均匀。
  • 8.切好的茄子块放进去加适量玉米淀粉和面粉用手抓拌均匀。
  • 9.使每块茄子都粘上面粉。
  • 10.锅中倒油,筷子放进油里面四周有小泡时将茄子放进去。
  • 11.炸至茄子块全身金黄捞出控油。
  • 12.锅中留少许油,白糖倒进去。
  • 13.小火用勺子不停的搅动。
  • 14.白糖熬成焦糖色。
  • 15.炸好的茄子块放进去晃动不粘锅,使每块茄子都粘上糖色。
  • 16.最后将熟芝麻放进去晃动不粘锅,使每块茄子都粘上白芝麻。
  • 17.关火装盘。
  • 18.成品图。
