  • 一品鲜酱油二匙
  • 白糖一匙
  • 鸡精半匙
  • 料酒二匙
  • 淀粉一匙
  • 玉米淀粉(水糊)四大匙
  • 精盐半匙
  • 料酒一匙
  • 胡椒粉半匙

Steps to make 溜虾段

  • 1.准备食材。
  • 2.大虾清洗干净,剥皮去头去虾线(不用洗了,以免水多)。
  • 3.加入葱姜丝,精盐,料酒和胡椒粉腌制二十分钟。
  • 4.元葱胡萝卜切片。
  • 5.切葱姜丝备用,调个碗汁:加清醋、白糖、料酒、一品鲜酱油,鸡精和适量淀粉搅拌均匀。
  • 6.淀粉中加半个蛋清,适量清水调成水糊,用手抓起能流淌下来,加入虾仁中拌匀。
  • 7.油温五六成热时下油锅炸,炸至定型就可以先捞出,不要炸时间太长。
  • 8.等油温再次至五六成热时,再复炸一次,炸制金黄色捞出。
  • 9.起锅烧油,下入元葱胡萝卜煸炒。
  • 10.下入葱姜丝煸炒。
  • 11.下入碗汁炒成稀糊,倒入虾仁翻炒挂糊既可出锅。
  • 12.出锅成品图。
