温州灯盏糕
灯盏糕是温州的特色名点,历史悠久。据说在元末明初刘伯温义军攻温州城的和城内义军联络暗号,为“等斩”糕(意为缚好内蒙古人),温州俗话“等斩”和“灯盏”是同音。另据传清光绪末年,温州人陈大姆、陈碎姆两兄弟,在东门陡门头设摊炸灯盏糕。内馅是猪腿肉和黄屿萝卜丝,外皮用新黄豆和米粉浆拌和,采用鲜猪油炸制。因外形酷似古代扁圆形的菜油灯盏,故得名“灯盏糕”。

  灯盏糕外皮松脆,圆边酥软,内馅爽口,独具风味。肉馅以萝卜刨成的细丝为主料加上猪腿肉和鸡蛋,用新鲜的猪油炸制。通常现做现卖,能保持“灯盏糕”的香脆。

  今天我将灯盏糕改良一下,白萝卜换了胡萝卜,猪油换色拉油

    Steps to make 温州灯盏糕

    • 1.准备好材料
    • 2.将水倒入面粉中,稀释程度大约5分水5分面粉,用筷子搅拌均匀后,再加入盐、味精、酱油、切碎的葱花、少许料酒,搅拌均匀,面粉浆就做好了。
    • 3.一般家里的油锅油量不多,怕炸不熟,所以事先把猪肉丝用盐、黄酒调味后蒸熟。
    • 4.用中火将色拉油先煮至沸腾,将大汤勺放入油中和油一起加热,等油温升高汤勺也就加热了,拿出将粉浆用小调羹勺到汤勺里,顺时针转一下汤勺使粉浆均匀的粘在汤勺上将多余的倒回粉浆里
    • 5.接下来将胡萝卜丝放进汤勺里,然后将肉丝放上去,再打入一个鹌鹑蛋。
    • 6.再铺一层胡萝卜丝。
    • 7.最后再浇上一层面粉浆,整个放入油里。
    • 8.等到快熟的时候,轻轻用小车划一下就脱膜掉下来了。
    • 9.等到灯盏糕有点变成金黄色的时候,就可以捞起来沥下油就OK了。
