团团圆圆----大菜:家乡名菜四星望月
粉蒸笼床是兴国县的客家家常名菜,每逢家人朋友聚在一起都会做这道菜。可以粉鱼、粉肉、粉鸡鸭,还可以粉毛芋、番薯、土豆等等;用竹编圆笼盛料,包含“合家团园、吉庆有余”的寓义。笼盖一揭,热气腾腾,香、辣、鲜味扑鼻而来,令人口舌生津,食欲大开。关于这道名菜可有一番典故,大家可以上百度搜搜就知道了,呵呵!还有对联,上联是:上盘下盘,盘套盘,猪肉、米粉、芋头片;下联是:主料配料,料配料,酱油、辣椒、蒜头瓣;横批是:四星望月。原本有四个小菜碟围在四周,中间的粉蒸笼床是月亮,四个小菜为星星,四星望月由此而命名,今天我把食材全部列入笼屉来个大团圆,祝大家团团圆圆、合家幸福!

    • 1.主料:米粉丝。
    • 2.主料:鸡尖。
    • 3.主料:肉片。
    • 4.主料:肉丸。
    • 5.主料:鱼片。
    • 6.生抽、老抽、料酒、蒜蓉辣椒酱。
    • 7.腌料:手工自制辣椒酱。
    • 8.用腌料腌30分钟肉片。
    • 9.鸡尖用腌料腌上30分钟。
    • 10.腌鱼时放些姜片和葱白腌10分钟。
    • 11.粉丝用腌料拌均即可。
    • 12.上笼蒸前先垫好大白菜。
    • 13.先铺上一层粉丝。
    • 14.用普通米粉拌均肉片、鸡尖和鱼片。
    • 15.在铺好的粉丝上面铺上一层拌好的肉片。
    • 16.再铺上拌好的鸡尖在边沿码肉丸。
    • 17.盖上盖蒸30分钟。
    • 18.准备好调料汁:海天蒜蓉辣椒酱、生抽、姜沫。
    • 19.30分后码上拌好的鱼片再盖上盖蒸10分钟再均匀的浇上一层调料汁再蒸5分钟即可出锅。
    • 20.出锅撒上葱花就可以开吃了。
