炸春卷
今年的立春是大年初五那天,一般立春这天我们都是吃春饼或者春卷的,这种食品是以薄面皮包馅、用油炸制而成。其具体制作方法为:面粉和成浆状,放些许在平锅底,用文火烧,时时旋转平锅,制成薄如蝉翼的春卷皮,然后包馅,卷成约二寸长的长筒状,两头以面糊粘住,以浮油煎至外焦里嫩、色香味俱佳。春卷皮一般用麦面,也有用鸡蛋皮、豆腐皮者。至于馅料则分南北两派,北方多用韭菜、豆芽、肉丝等,而江南则多用白菜、肉丝、虾丝、海米、芹菜、豆沙、水果等。

Steps to make 炸春卷

  • 1.准备好洗干净的绿豆芽、韭菜、姜和猪肉。
  • 2.猪肉切丝,姜切末备用。
  • 3.绿豆芽用开水焯烫一下过冷水控干水分备用。

  • 5.炒锅将油烧热以后加入猪肉丝煸炒

  • 10.将切成段的韭菜和控干水分的豆芽放进盆子里,将煸炒好的猪肉丝放凉以后加进去再加点香油翻拌均匀。
  • 11.准备好春卷皮,打散一个鸡蛋封口用。
  • 12.将馅儿放在春卷皮上
  • 13.包好以后在最上面抹点鸡蛋液
  • 14.然后卷好
  • 15.将所有馅儿都包成春卷坯子。
  • 16.下热油锅炸制两面金黄就可以开吃啦。
