  • 荞面300g
  • 白面100g
  • 鸡蛋1个
  • 葱姜少许
  • 八角2个
  • 干红辣椒2个
  • 料酒少量
  • 香葱2颗
  • 老抽少许

Steps to make 鸡肉荞面摊饼

  • 1.将土鸡收拾干净,撩去绒毛,剁成块,用清水浸湿2小时左右,冲洗干净。
  • 2.葱姜改刀,花椒、八角、干红辣椒备好。
  • 3.炒锅放油烧热,放入花椒、八角、干辣椒、姜片爆香。
  • 4.放入鸡肉炒干水分。
  • 5.烹入料酒,放入葱花。
  • 6.放入适量生抽。
  • 7.少许老抽。
  • 8.放入盐。
  • 9.加入开水,漫过鸡肉。
  • 10.倒入焖烧锅中,大火烧10分钟左右。
  • 11.将焖烧锅放入外锅中,加盖焖煮2小时左右。
  • 12.荞面和白面掺和在一起,打入一个鸡蛋,放少许盐,和成面糊,摊成薄饼。
  • 13.盛适量鸡精及汤,放少许香葱,食用时用荞面摊饼蘸食,风味独特,是陕北地区的风味小吃。
