自制泡菜
泡菜的做法简单,材料易得,拿小罐子泡一罐,酸萝卜,酸豆角,或者金包菜叶子炒菜吃,把梗拿来做成酸包菜梗,泡好的泡菜做酸包菜梗炒牛肉,炒个酸豆角配饭或者拌面都很方便~

  • 高度白酒20ml

Steps to make 自制泡菜

  • 1.找一个干净的,无水无油的小罐子,把萝卜切成条放进去,腌泡菜第一罐一定要用白萝卜腌,泡5-7天,把泡菜水做好,后面就可以随意腌其他菜了,泡2-3天就酸了能吃了。
  • 2.把生姜切块,蒜整粒放进去,八角和花椒也放进去罐子。
  • 3.加入凉白开,没过萝卜,加入高度白酒和盐,盐按照比平常炒菜稍微咸一点就可以了。然后盖上盖子,放入冰箱冷藏,让它慢慢发酵5-7天,尝一下萝卜觉得酸度够就行了。第一罐的萝卜因为用来做泡菜母水,泡的时间长,所以软,通常不吃,萝卜捞出来丢掉,直接用做好的泡菜水泡第二罐,这个时候泡个2-3天就能吃啦。
  • 4.这是后面泡的酸豆角。
  • 5.切碎了放2个干辣椒炒一下,配饭或者拌面真香,不像外面卖的酸豆角死咸,或者做成肉沫炒酸豆角~
  • 6.这是泡好的金包菜的梗。
  • 7.切片炒个泡菜炒牛肉,或者泡菜炒鸡蛋,都美滋滋~
