自己在家制作美味可口的广式月饼

Steps to make 自己在家制作美味可口的广式月饼

  • 1.将所有材料准备好。(枧水用食用碱兑水就可以;食用碱与水的比例为1:3)
  • 2.把所有材料依次倒入面包机内。
  • 3.选择和面功能和面,和20分钟,面团表面光滑即可。把面团取出放在容器内,用保鲜膜封口,静止4个小时。
  • 4.静置了4小时后,将面团取出放在硅胶垫上,手工和面,和几下就可以,面团表面光滑即可。
  • 5.将面团分成10克的小剂子;月饼馅分成40克的小剂子(这是按50克的月饼模来做的)。
  • 6.倒一点色拉油在硅胶垫上,因为面团很粘,用油涂抹在手上,包月饼的时候,可以起到防粘的作用。如果手上不涂油的话,包月饼的时候,面团会粘在手上。
  • 7.先拿一个面团,放在硅胶垫上,用手掌把面团按薄一些。
  • 8.把月饼馅放在面团里,用虎口往上推面团,借住手掌肉往上慢慢推,直至皮全部包住馅为止。
  • 9.将成团的月饼球,拿出放在手中揉搓。一边整形,一边将面粉均匀沾满月饼球(防粘的方面为高筋面粉)。
  • 10.把月饼球放进月饼模具里面,然后将月饼模具放在烤盘上,用力一压就可以印出漂亮的花型了。
  • 11.为了防止月饼容易烤裂,我们拿一个喷水壶,在月饼上稍微喷一点水。没有喷水壶的可以用羊毛刷刷一点水在月饼上。
  • 12.烤箱180度预热5分钟,然后将月饼放入烤箱内先烤5分钟。
  • 13.烤好5分钟后取出,用羊毛刷刷上薄薄的一层蛋液;继续放入烤箱烤大概15分钟左右,烤至表面金黄色就可以了(蛋液比例为:2个全蛋+1个蛋黄;用打蛋器打匀后过筛即可)。
