这个芒果馅儿的冰皮月饼纯属意外。第二次做冰皮月饼,本是想做个芒果皮的,没想到估计不足,把皮给做稀了,灵机一动,将皮料改作了馅料。没想到效果还不错。

  • 椰蓉2大勺
  • 冰皮面团306克

  • 1.准备用料
  • 2.芒果取果肉,放在筛网上用勺碾压过滤
  • 3.得到185克果泥
  • 4.将果泥,糖粉和玉米油一起倒入大碗
  • 5.搅拌均匀
  • 6.将三种粉倒入大碗,加入搅拌好的芒果泥
  • 7.搅拌均匀
  • 8.过筛2次
  • 9.倒入容器中,封好保鲜膜静置半小时
  • 10.大火上锅蒸25分钟
  • 11.出锅,趁热搅拌,放至完全冷却
  • 12.加入2大勺椰蓉,搅拌均匀
  • 13.再加入2大勺糖粉,搅拌均匀
  • 14.分割成12克一个的小块
  • 15.冰皮面团分割成18克一个的剂子
  • 16.取一个剂子,用切面刀抹成中间厚边缘薄的圆片
  • 17.放入馅料
  • 18.包好收口
  • 19.收口向下放置
  • 20.月饼模中装入少量熟糯米粉,摇晃均匀后倒出
  • 21.将做好的月饼坯放入模具中
  • 22.扣在案台上,推下手柄,压实
  • 23.提起月饼模,轻轻推出月饼
