手撕牛肉

Details of ingredients

  • 牛肉1000g
  • 沙姜5颗
  • 八角2颗
  • 草果1颗(需切开)
  • 香叶10片
  • 花椒5g
  • 十三香5g
  • 生抽3勺
  • 老抽1勺
  • 盐焗鸡粉半包
  • 1勺
  • 蚝油1勺

Steps to make 手撕牛肉

  • 1.备好图中材料(牛肉选择纹路清晰的)
  • 2.牛肉切大块,冷水放入姜和牛肉,煮开,煮5分钟即可捞出(白色的筋最好挑去,但是我刀工不好,而且家里刀太钝,就省略了)
  • 3.煮好,回缩的牛肉,切成小条,再过一次清水,拧干水分
  • 4.放入盐焗鸡粉,搅拌均匀
  • 5.牛肉放入锅中,放入除孜然粉和辣椒粉外的所有调料
  • 6.加入水,煮40分钟(我比较喜欢有嚼劲的口感,这个时间刚合适,如果喜欢吃软一些的,可以延长时间,或者改用高压锅)
  • 7.煮好的牛肉,捞出,沥干水分
  • 8.锅内放油,5分热后,倒入牛肉
  • 9.炸至自己喜欢的酥软成度
  • 10.捞出炸好的牛肉
  • 11.趁热撒入孜然粉和辣椒粉,拍完照之后,才发现,忘记加入白芝麻了,加入芝麻更好吃呢
