  • 1.主料与辅料为:高筋粉,干贝,鸡脯肉,冬笋,水发香菇,金华火腿,甜豆,虾仁(干贝事先加料酒葱姜蒸熟,鸡脯肉,冬笋,香菇,火腿切丁,虾仁上浆待用)(虾仁上浆法为,虾仁解冻洗干净,然后用干毛巾吸干表面水份,然后加适量盐,搅拌上劲,然后加适量生粉拌匀即可)
  • 2.取适量面粉,加清水适量,
  • 3.然后揉成表面光滑的面团,
  • 4.然后用擀面棒擀成大饼状(水量无法控制的话,可以少量多次加,面团揉好软硬适中就可以了)
  • 5.然后将面饼用刀切成条状,
  • 6.揉搓成小长条,然后在切成小丁,
  • 7.然后取一个小丁,用大拇指按在上面,向前推搓就成了猫耳朵状
  • 8.猫耳朵
  • 9.然后取一锅清水,
  • 10.待水烧开,放入猫耳朵,
  • 11.待猫耳朵浮起,即可捞出,
  • 12.放入冷水中过凉漂洗
  • 13.将鸡脯肉,干贝丝,香菇丁,火腿丁,冬笋丁,虾仁,放入沸水里焯水,然后捞出清水中过凉,
  • 14.然后取适量清汤,放入上述材料,待清汤沸腾时放入猫耳朵和甜豆,
  • 15.然后在次沸腾起时加入盐和鸡精调味即可(没有清汤可以用鸡汤,排骨汤都可以)
