曾经在四川吃过渝信糕,总也忘不了那种甜甜糯糯的口感,但苦于没有配方,一直没有动手做。偶尔翻阅中国烹饪杂志,发现了这个美食的做法,就赶紧把这个草拔掉啦。这个美食是用红薯蒸熟混合糯米粉和少许面粉做外皮,里面包裹莲蓉馅心,沾上面包糠油炸。我用的红薯是的白瓤红薯,这个红薯是干面的口感,类似栗子的口感,因为红薯比较干,加了糯米粉后不会成团,所以我加了些蒸南瓜的汤汁,然后外表沾的椰蓉,这样味道更丰富。做好后感觉到原来这种地方特色美食,自己在家做也不是很难啊。

  • 糯米粉25g
  • 面粉5g
  • 白糖5g
  • 南瓜汤汁50g
  • 莲蓉馅100g

Steps to make 渝信糕

  • 1.今天用的的白瓤红薯,洗净对切两半蒸25分钟,蒸熟
  • 2.去皮用刀碾压成泥
  • 3.把红薯泥、糯米粉、面粉、白糖放入盆里
  • 4.揉搓均匀,因这个红薯很干,所以揉搓后依然很散,不会成团
  • 5.蒸红薯时蒸了南瓜,用里面的汤汁把红薯泥弄成团
  • 6.在揉搓好的的红薯里加入南瓜汁,用了50克,没有南瓜汁可以直接加水和成团。如果用的红薯水分大,可以不用加汤汁的。
  • 7.能揉成团即可
  • 8.莲蓉馅取需要的量
  • 9.把红薯面团均分成8剂子,莲蓉馅分成12克的剂子
  • 10.用红薯面团包裹莲蓉馅,包严实揉圆
  • 11.把团好的坯在蛋液中滚一遍
  • 12.再在椰蓉中滚一遍,外表包裹一层椰蓉
  • 13.全部弄好的渝信糕坯
  • 14.油温4成热,入锅炸
  • 15.中火炸至外表金黄。千万不要用大火炸,油温也不要过高,否则易爆开
  • 16.捞出用吸油纸吸掉表面油就可以享用啦
  • 17.掰开一个,里面是甜甜的莲蓉馅,外面的糯糯的红薯,很好吃的哦
