舌尖2中肉锅盔让人一眼难忘。鲜肉锅盔是四川的名小吃。有幸吃过,味道非常不错,香酥脆度都上佳,鲜肉的清香柔和在面团里,又得香气柔和各种调味。自己动手在家也可以做出来肉锅盔,原想也先烙制后用烤箱烤的,但懒了,省下一步,用电饼铛直接煎熟。我想有时间一定做一次烙完后烤制的锅盔,也许和今天的不一样味道呢。其实想来,做美食也并非难事,只要你敢去尝试,成功总是嫣然而至。

  • 1.面粉先和成面团。要和的柔软,300g的面粉我大约加了180g的水。加上一汤勺白油。
  • 2.在揉面把油和面团揉均匀。饧至少半小时。
  • 3.猪肉剁成茸。最好选择4、6的肥瘦比例的五花肉。
  • 4.放入剁好的大葱和姜末。在放入五香粉、蚝油、少量植物油、盐。拌匀
  • 5.拌匀后在放入一个鸡蛋。
  • 6.在搅拌均匀。
  • 7.面醒好,分成小面剂子。团好。
  • 8.每个面剂子擀成长椭圆形后,铺上拌好的肉馅。
  • 9.边抻边卷。
  • 10.卷好后,团成剂子,压扁,都依次做好,饧5分钟
  • 11.饧好后,擀成圆饼。
  • 12.电饼铛倒油,放入擀好的小饼,有要多些,煎炸的样子,两面翻动,烙熟即可,
