【湖北】鱼糕
提起鱼糕,湖北的人应该都很熟悉,在我们这边过年或是酒席宴上都会出现鱼圆、肉圆、鱼糕这几样菜,记得小时候过年,每户人家都会在过年前几天开始准备这几道年菜,以前都是纯手工制作,虽说在我们这边也随处可以买到这些,但都不是手工制作的,而且没有鱼鲜味。今天我按照我们这边传统手法亲制了鱼糕,很成功,整个制作过程和用料也详细记录下来了。”

  • 葱白10g
  • 生姜20g

Steps to make 【湖北】鱼糕

  • 1.将胖头鱼处理干净,去头,剖开后放清水里浸泡1小时,中间换几次水,漂净血水
  • 2.葱白和生姜切末,生姜末里面加200g清水泡着备用
  • 3.肥肉用料理机打成泥备用,或者用刀剁细腻
  • 4.用刀在鱼上刮出鱼肉泥
  • 5.刮好鱼肉泥再用刀把鱼肉剁细腻
  • 6.加入两个蛋清里面,搅拌均匀
  • 7.加入姜水搅拌混合(只要姜水,姜末不要
  • 8.加入黑胡椒粉、鸡精、葱白末里面拌匀
  • 9.加入淀粉里面拌匀
  • 10.加入肥肉泥里面拌匀
  • 11.最后加入盐里面搅拌
  • 12.搅拌大概20分钟的时间,搅拌上劲
  • 13.放入铺有蒸布的蒸屉里面,手上沾水,将鱼茸整成方形
  • 14.水烧开后,将蒸屉放蒸笼上面,中火蒸30分钟的时间,然后将蛋黄液刷在表面上
  • 15.再次入锅蒸5分钟左右就做好了
