广式莲蓉月饼

Steps to make 广式莲蓉月饼

  • 1.莲子提前一天泡水泡一个晚上
  • 2.跑好的去莲心洗干净用电压锅煮熟
  • 3.煮好了
  • 4.然后放入搅拌机打成泥煮莲子的水一起打
  • 5.打好的放入不粘锅
  • 6.到入油拌匀过程电磁炉加热
  • 7.再倒入糖拌匀(这边可以先加热拌匀然后再分次加油)我比较懒全部下去
  • 8.做馅是个考验耐性的活要一直翻炒我差不多炒一个小时才好
  • 9.到后面锅底干干净净的
  • 10.炒干后放在一边冷却待用
  • 11.开始做月饼皮、糖浆油枧水倒入盆里用手动打蛋器打匀
  • 12.打匀后
  • 13.筛入中筋面粉
  • 14.用刮板刮成面团
  • 15.这样子
  • 16.然后用保鲜膜包起来室温醒3个小时以上!一定要三个小时以上再用不然太软不好包、烤起来也会月饼体会蹲下来
  • 17.把冷却的馅和醒好皮以1:1的量戳团
  • 18.皮擀成圆片然后放入馅包起来(右手大拇指裹住团体左手大拇指按照团顶部右手向左转、转一下左手轻轻按一下渐渐的皮就往上爬了到顶部收口
  • 19.包好了
  • 20.另外用碗碟放一点面粉、把包好的月饼团在里面滚一圈拿起来拍去多余的面粉
  • 21.拍好后放入喜欢的磨具压出模型直接倒放在铺好油布或者油纸的烤盘上
  • 22.烤箱预热上火200下火175、入烤箱前在月饼上喷一点水刷也可以入烤箱烤5分钟拿出来轻轻的刷一层蛋黄液后入烤箱烤15分钟左右
  • 23.烤好后出烤箱冷却后隔空气回油两天就可以吃了!
