用途广泛堪称万能酱,
无论是烹制海鲜、肉类,
还是质地柔软的蔬菜,
只要放上一小勺,
菜品立即品质高大起来,
还能收到意想不到的口味。

XO酱虽是酱中极品,
其制作的材料却并没有一定的标准。
据说各家餐馆制作XO酱都有所不同,
配方更是各餐馆的商业秘密。
我的XO酱方子来自一位五星级酒店著名大厨亲传,
我又略加改动了一下,
自己做出来的酱料,

  • 丁香鱼干50g
  • 嫩笋尖60g
  • 洋葱1个
  • 大蒜5瓣
  • 蚝油1大勺
  • 生抽1大勺
  • 韩国辣酱1大勺
  • 白糖1大勺
  • 小米椒3个
  • 大葱20g
  • 料酒1小勺
  • 白米醋1小勺
  • 5g

  • 1.1、干贝洗净提前用清水泡20分钟,加入料酒、白米醋和葱姜,再加入适量清水。
  • 2.2、入蒸锅大火蒸30分钟,放凉备用,海米用清水泡20分钟。
  • 3.3、丁香鱼干用清水泡20分钟沥干水分,洋葱切细丝、葱切碎、大蒜切片、切丁的嫩笋尖焯水备用。
  • 4.4、凉好的干贝用手撕成丝,锅里倒油烧至6成热。
  • 5.5、倒入干贝丝,中火煸炒约2分钟,盛出干贝丝,锅里热油倒入嫩笋尖爆炒出锅。
  • 6.6、锅中热油下入海米,煸炒出香味儿盛出,再入油爆炒丁香鱼干炒香出锅。
  • 7.7、锅中热油倒入大蒜片爆香,放洋葱丝转小火,慢慢煸炒至洋葱金黄酥脆。
  • 8.8、倒入炒好的干贝丝和海米。
  • 9.9、倒入炒好的丁香鱼干和笋尖。
  • 10.10、加入韩国辣酱和蚝油、生抽。
  • 11.11、倒入白糖继续煸炒,一直炒到各种原料变干、“汪”在油中,最后加入小米椒和葱碎,煸炒均匀即可。
