酸辣粉起源于四川川西一带,是四川省、重庆市、贵州省等地的传统特色小吃,属于川菜、渝菜、贵州小吃。其特点是麻、辣、鲜、香、酸且油而不腻。 酸辣粉主粉由红薯,红苕,豌豆按比例调和,然后由农家用传统手工漏制而成。酸辣粉源于西南民间,取食材至当地手工制作的红薯粉,味以突出酸辣为主而得名。

  • 1.备好材料。
  • 2.花生米,锅中放油,小火,炸至爆皮即可,捞出备用。
  • 3.辣椒,葱,蒜,香菜切段碎。
  • 4.锅中放油烧热,稍微凉一下倒入辣椒段中,炸出油。
  • 5.葱,蒜,香菜放入碗中。
  • 6.放入辣椒油,花生米等。
  • 7.加入生抽,醋,盐,搅拌均匀。
  • 8.粉丝提前泡10分钟,煮到透明Q弹,放入一碗鸡汤。
  • 9.酸辣香爽,好吃过瘾。
